Apparently, I’ve been on a bit of a food kick since last week was Five Favorite Meals to Bring a New Momma. BUT, Lent is quickly approaching so I thought this would be a good time to list out a few of our favorite meatless meals. Linking up with Moxie Wife and CatholicMom.com today.
1. Baked Spaghetti

I use this recipe, but just leave out the meat. It’s basically just spaghetti and sauce but with a little cream cheese. I usually combine this one and the Mexican Sweet Potato recipe (below) on the menu for the week and I’m able to use up the one package of cream cheese. Oh and I leave out the fried onion things on top.
2. Mexican Sweet Potatoes

These are surprisingly filling, but I guess that makes sense with the cheese, black beans, corn and sweet potato. I multiply the recipe a couple times depending on how hungry we are so that we’ll have leftovers for lunch the next day.
3. Meatless Pizza

We’ve found lots of ways to make pizza yummy without the meat. Sauteed mushrooms and peppers, olives, basil, tomato and Parmesan are all some of our favorites. My favorite crust is this one.
Lots of eggs, cheese, milk and some broccoli make up this tasty quiche. Noah loves to help me make the super easy crust and press it into the pie pan.
5. Easy Coconut Curry

Have you tried curry recently? We’re loving it over here, especially this recipe for Easy Coconut Curry. I usually just dump in a bag of mixed frozen veggies and I’ve forgotten the sweet potato a couple times and it’s turned out great. Although the sweet potato was really good too.
