I set out to post this back when I was pregnant with Hailey because I had so many people request it after I wrote this post. But alas, it took me almost 2 years.
Plus, I’m sure all of you have encountered a family who’s got dairy allergy/intolerance. Having a few diary free recipes on hand is always a good thing.
Now that Hailey has a dairy intolerance, I’ve had a bit more practice with the whole dairy free thing and a bigger list of recipes to pull from.
1. Pulled Pork
I’ll get a pork roast, stick it in the crock pot with some chicken stock for a few hours. It’ll pull right apart and then you just have to add a bottle of BBQ sauce (make sure you check the label, some have dairy).
Costco also has a tasty pulled pork, (although it does have nitrates – boo!).
Give them some buns and a salad, maybe some fresh fruit and you’ve got a winning dinner.
2. Chicken Soup
Chicken noodle soup is always good, but if you’re wanting to mix it up a bit this Thai Coconut Chicken Soup has been a huge hit around here.
3. Breakfast Casserole
If your bringing the lucky momma breakfast (or dinner, we totally eat this for dinner all the time), this Paleo Breakfast Casserole is so, so good! If you aren’t actually dairy free and you are making some for your family too, throw some cheese on top and it’s amazing.
4. Rotisserie Chicken
Super easy, especially if you don’t have the time to cook something yourself. Grab one for her family and one for yours. Maybe do a bagged salad or fresh green beans (all ready washed and snapped, ready to throw in the oven).
5. Sloppy Joes
This recipe is amazing! It only takes about 20 minutes to put together, travels well, and is super easy to reheat. I bet it would probably be a good freezer meal too.
